TASTY TUESDAY

Aloha Chicken

5 lbs chicken breast, cubed or sliced into strips
sprinkle of salt
1 cup frozen orange juice concentrate
1 cup coconut milk (usually found in the asian food section of your grocier)
1 cup soy sauce
1/4 cup sesame oil
white rice
large can cubed pineapple, drained

Rinse and pat dry chicken breast cubes (or strips). Place chicken in a dish and lightly salt the chicken. Place the dish of chicken in the fridge for 30 minutes.

Use this time to mix together the oj, coconut milk, soy sauce and sesame oil.

Remove chicken from fridge. Drain any juices from the chicken. Place chicken in crockpot and pour mixture on top. Stir well.

Cook on low about 7 hours.

Serve over hot cooked white rice with chunks of pineapple.

Since this is an Asian dish, it may not appeal to everyone. I can say that I am not a big fan of Asian food, but this is quite tasty! My hubs loves it! It is good for any season and most any occasion! Enjoy!
